For six weekends this winter, Willespie’s verandah is home to Melissa Palinkas, one of Western Australia’s most respected chefs.
Named Good Food Guide Chef of the Year in 2019, with her restaurant Young George recently awarded a second hat, Palinkas is known for a bold, produce-driven style grounded in nose-to-tail and root-to-shoot cooking.

A different hero dish each week, cooked over the purpose-built asado and above-ground grill. The way Sunday should be: unhurried, generous, unapologetic. Pull up a chair on the verandah, pour a glass of Willespie, and let Sunday do its thing.

Melissa cooks with what’s good right now — pulled from the ground, picked off the trees, or landed on the boats that week. Sourced directly from WA growers, makers and fishers. The hero dish is shaped by what’s at its peak and what the asado is calling for, and each week’s menu is published the week before, so you know what’s coming.
