The philosophy behind their wines and driving their decisions for them is a very classical and traditional one. They are focused on the classic varieties of Margaret River – Cabernet Sauvignon and Chardonnay. They are aiming to produce the wines in a very traditional, old world manner to allow for their own individual voices to be heard most clearly, not to be the bearers of a heavy winery fingerprint. Purity of fruit, balance, elegance and delicacy. These are all focus points for their production. Doing everything possible to achieve fruit quality at harvest as close to perfection as possible is the cornerstone of their fine wines. They work with leading growers located on favourable vineyard sites and do everything they can to ensure the fruit that arrives at the winery is in optimum condition.

So what does this mean exactly?It means that they only work with indigenous yeasts which arrive on the skin of the grapes and bunches from the individual vineyard where they were harvested and then are encouraged to ferment those very same grapes. Through using the traditional technique of making a petit cuvee where a crate or two of perfect bunches, with not a blemish on them, are selectively harvested a week or so prior to harvest and crushed, in this case by hand, and a small and strong ferment begins. This highly active indigenous yeast ferment is added to the rest of the grapes when they arrive at the winery and allows for a sometimes slow to initiate wild ferment to begin far more rapidly. To more practical matters, all of their fruit is processed in a basket press. This is the gentlest way of pressing grapes as there is no tumbling of stalks and skins involved which can extract harsh elements from the grapes themselves. The white grapes are all basket pressed as whole bunches with no destemming occurring at all. The resulting juice, whilst being lower in yield than if you were to destem the fruit, runs from the press truly bright and clear and is immediately transferred to barrels for ferment.

Came here for a wine tasting and a little picnic 🧺🍷🧀 — such a perfect spot! The views are beautiful and the space is wide open, ideal on a sunny day. The cheese and crackers were simple but really tasty, and it’s an easy place to drop by even after lunch for something light. Loved the relaxed vibe.

It was a spur of the moment choice drop in at Mr. Barval wines. We had just toured Mammoth Caves. The signage had caught our attention. Thank goodness we were not rushed or we’d have passed by. A simple wine tasting with a basic platter. But… nothing was amiss. Service was friendly and informative. The choice for a light lunch seemed limited. Yet that was my mistake! Cheese and crackers with a condiment and olives. Sounds like not much until you see the choices of cheese and choices of condiment. Local cheeses and site produced condiments from the on site grown, produce. We chose the camembert it was uniquely divine, and paired it with a zucchini pickle. Oh my goodness! This was amazing! We kept to a core group of wines but were treated to one premium quality. A Rose, Mistral, Cabernet Malbec, from the core selection when paired with the wine it was exquisite. Mr. Barval is a small winery with a beautiful cellar door setting looking over still waters of the significant dam below through the trees. It is well worth looking up and visiting. No I’m not a connoisseur but I know when I like something, and everything here was to like. Wine, food, setting and people. We are looking forward to receiving more of their wines in the post. With one bottle of the rose to enjoy while still in Margaret River. The Rose is exceptional but you can hear why directly from them when you visit.

What a relaxing place to enjoy some fine wines and cheese if you’d like! We were lucky to have chanced upon this vineyard on our trip down to Margaret River, definitely recommend to check out if you’re in the region.

Very pleasant couple of hours with lovely wines and food. Tried the core wines and the riservas. Can recommend both. Had to buy a bottle of the riserva Chardonnay to take to Perth for a birthday treat. It's outstanding.
