Like Mal Chow (Chow’s Table), who fires up the wok for his next-gen take on Chinese-Malay street food, Robert Webster (Normal Van) who serves up Canadian-inspired comfort food, and Brendan Pratt (Busselton Pavilion/Parker Group) who does Aussie fast-food faves, but cool and contemporary. You’ll get a brew by Rocky Ridge (or a wine) when you arrive, and incredible dishes that pay homage to the produce and flavours of the South West.
